What Does the Label Say?

Gluten hides in the most ridiculous places: candy, sauces, turkey brine and cold cuts. Reading labels is very important to someone that is looking for gluten. In the U.S., the Food Allergen Labeling and Consumer Protection Act mandates that labels on foods manufactured after January, 2006, will list the word “wheat” to indicate the presence of wheat. However, labels do not have to list other gluten-containing grains such as barley, rye, spelt, kamut, or triticale. The definition and requirements for gluten-free labeling are scheduled to be decided by the U.S. Food and Drug Administration by 2008, which is right now! So look for more info on the USDA site. Currently, many manufactures have already added an identifier or warning on their packaging indicating gluten free or contains gluten. But mistakes happen and you need to be alert. There is a site dedicated to food allergies that lists the mislabeling of products as soon as they become aware of them.
