We Have Two Baskets Still to Give Away |

Well I am happy to report that our fourth winner has presented herself and she is totally thrilled to be getting a great big basket of spices. She is Fawn Bedeker, congrats Fawn and we wish you well in your cooking.

Holiday Spice Pumpkin Bread
Ingredients:
- 3 cups white sugar
- 4 eggs
- 2/3 cup water
- 2 tsp baking soda
- 1 tsp baking powder
- 3 1/2 cups all-purpose flour
- 2 tsp salt
- 1 tsp The Spice Hunter Madagascar Pure Vanilla (extract)
- 1 tsp of The Spice Hunter Highland Harvested Saigon Cinnamon (ground)
- 1 tsp of The Spice Hunter Pumpkin Pie Spice (blend)
- 1 tsp of The Spice Hunter Jamaican Allspice (ground)
- 1 (15 ounce) can pumpkin puree
- 1 cup chopped walnuts
- 1 cup raisins
- 1 cup vegetable oil
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour three
- 7 x 3 inch loaf pans.
- Mix oil, sugar, and eggs together in a large bowl. Mix in pumpkin puree and water. Stir together flour, soda, baking powder, salt, and spices. Add to the pumpkin mixture, and mix until just combined. Stir in nuts and raisins. Divide batter into prepared pans.
- Bake for 1 hour. Cool on wire racks.
- Slice when cooled, yummy just alone or you can use butter or even honey butter for an extra sweet taste!

| I'd love to win a basket... AND one of my favorite homemade gift items during the holidays is pumpkin bread. We are lucky enough to have a pink grapefruit tree in our backyard, so I pair it with a jar of homemade Maple Citrus Salad for a festive gift. Maple Citrus Salad (Ellie Krieger) * 4 navel oranges (I substitute our pink grapefruit) * 2 tablespoons maple syrup * 1 teaspoon fresh squeezed lemon juice * Pinch cinnamon Directions With a vegetable peeler remove a 2 by 1-inch piece of zest from 1 of the oranges, being careful not to peel off any of the white pith. Cut into thin strips and set aside. Cut about 1/2 inch off of the top and bottom each piece of fruit. Remove the peel and pith from each piece of fruit by standing it on its end and cutting down along the curve of the fruit. Slice the fruit into 1/4 inch thick rounds and arrange on a platter. In a small bowl combine the maple syrup, lemon juice and cinnamon. Pour the dressing over the fruit, garnish with the zest and serve. |

| Growing up grandma always made this and we loved it: I have made it a little easier and tie friendly over the years. Wild Rice with walnuts and cranberries: Make a box of your favorite wild rice according to directions. When ready mix in a bag of Craisins and a cup walnut pieces. Mix and Eat. And I have to tell you it is good cold or warm. Congratulations to Fawn!!!!!! |

| Please enter me in the contest. My email is: aleach6179 AT gmail DOT com I got this recipe from Everyday Food Magazine. It's very easy and makes yummy rolls. No-Knead Dinner Rolls Ingredients Makes 18 2 cups warm water (105 to 115 degrees) 2 packages (1/4 ounce each) active dry yeast 1/4 cup sugar 4 tablespoons butter, melted, plus more for pan and brushing 2 large eggs, lightly beaten 1 1/2 teaspoons salt 6 cups all-purpose flour (spooned and leveled), plus more for shaping dough Directions Pour warm water into a large bowl; sprinkle with yeast, and let stand until foamy, about 5 minutes. Add sugar, butter, eggs, and salt; whisk to combine. Add flour; mix until incorporated and a sticky dough forms. Brush top of dough with butter; cover bowl with plastic wrap, and set aside in a warm place until dough has doubled in bulk, about 1 hour. Turn dough out onto a well-floured work surface. With floured hands, roll dough into a thick log. Cut into 18 equal pieces (halve log, cut each half in thirds, then cut each piece into thirds again). Brush a 9-by-13-inch baking pan with butter. One at a time, flatten each piece of dough, then fold edges toward the center, pressing to secure, until a smooth ball forms. Place dough balls in prepared baking pan, smooth side up (you should have 3 rows of 6). Cover loosely with plastic wrap, and let rise in a warm place until doubled in bulk, 30 to 40 minutes. (Alternatively, refrigerate, at least 4 hours and up to 1 day.) Preheat oven to 400 degrees. Remove plastic wrap; brush rolls with butter. Bake until golden and rolls sound hollow when tapped on bottom, 35 to 40 minutes (tent with aluminum foil if browning too quickly). Pull rolls apart, and serve warm. |
