What? Nothing for Lunch and We’re Running Late! |

I was in a terrible rush this morning. I got up early enough. The kids were still asleep, I got a cup of coffee, called my mother to say good morning and catch up while I had a quiet moment. My husband had already left on a business trip and I had a plan for the kids’ lunches. All was well.
Then I went to check email to make sure there were no urgencies to start me day and I got some good news. Some very nice reader had nominated me for the Divine Caroline award. I was so excited I thought I would add the badge to the site right away to get the voting started right away. I still had time the kids were not up yet. That is when everything went wrong…
Well for starters I broke the html code by making an inputting mistake that then needed professional help to fix and caused the site to look goofy for a couple of hours. As I was in a panic trying to fix the problem myself I lost track of time and it was now 20 minutes to go before we had to leave for school and nothing was done.
I came out of the office to find 3 out of 4 children still in their pj’s and 2 of them playing Nintendo! I was furious. Well with the onset of loud motivation (my PC term for yelling at my children) they were at least dressed and I had encouraged (demanded) the two older ones to help me with breakfast and lunch. That is when the next blow came.
I had planned on making turkey sandwiches for lunch but when I got started I found there was no more bread! There were no tortillas either. We had been taste testing a bunch of crackers and the ones left were the ones the kids didn’t like. NOW WHAT? Do I really have nothing for lunch? How could that be, I am the lunch lady after all. Once the panic subsided I remembered I had some cooked brown rice in the freezer. I also had some canned black beans. We have tons of fresh fruits and some yogurts; okay things are getting better.
This is what I did. I heated up the black beans with the rice and added some Mexican seasoning from Spice Hunter (good stuff). I put that into insulated food jars and into their lunch boxes, along with Sun Chips, an apple, small box of raisins and water; that was lunch. I packed a small yogurt and a Fiber One bar for snack, with a small 5oz can of 100% apple juice. Done! Phew! That was close.
