Armenian-Inspired Chicken Pinwheels

Note/Suggestions: Lavash is an Armenian flat bread made with a similar dough as pita. You can get different flatbreads at your local grocer if you cannot find lavash. Makes 2 meals.

Ingrdients:

  • ¼ cup mayonnaise
  • 1 tbs of basic Armenian dry spice mix (recipe to follow)
  • 1 Lavash
  • 1 cup of cooked chicken shredded
  • Thinly sliced tomatoes
  • ½ cup of mixed greens or 3 lettuce leaves

Directions:

  1. In a small bowl, combine the dry spice mix with the mayo.
  2. Lay the lavash out on a clean work surface. Spread the mayo mixture evenly on the bread leaving about 1 inch of room on all sides.
  3. On the third of the bread closest to you, layer the chicken, tomato and greens. Carefully roll the lavash as tightly as you can without breaking it. Wrap tightly in plastic wrap and refrigerate for at least an hour or up to overnight.
  4. To serve, unwrap the roll-up and slice into discs about 1 ½ inches to 2 inches wide. Lay them on their side in resealable container fitting them together snuggly so they do not move around. Depending on your child you will serve them 4-6 pinwheels each.

Armenian Dry Spice Mix:

  • 1 tbsp Ground Allspice
  • 1 tbsp Cayenne Pepper
  • 1 tbsp Ground Fenugreek or Fennel Seeds
  • 1 tbsp Ground Cumin
  • 2 tbsp Paprika
  • 1 tbsp Ground Cinnamon (optional)
Using a whisk, mix all the spices together well.  Store this combination in an air tight jar for up to 3 months; use in marinades or as a dry rub on meats.
