Blueberry Chicken Salad
Note/Suggestions: This salad is so satisfying. It is also a great way to use leftover chicken if you have it on hand.Makes 4 servings
Dressing:
Ingredients
- 1/4 cup mayonnaise
- 1/4 cup plain yogurt
- 1 tablespoon of dried mustard powder
- Dash cayenne pepper
- 3 teaspoons of fresh chopped tarragon or 1 teaspoon of dried
Directions:
- Combine all ingredients in a medium sized bowl and mix well.
Salad:
Ingredients
- 2 cups cooked, boneless, skinless chicken , cubed
- 1/2 cup celery, chopped
- 3/4 cup red onion, finely chopped
- 1/2 cup red bell pepper, diced
- 2 cups fresh blueberries, rinsed and drained well
- 1/4 cup chopped almonds
- Salt and pepper to taste
Directions
- Combine chicken, celery, onion, bell pepper and almond then toss with dressing.
- Carefully fold in blueberries until well coated then cover and refrigerate 30-60 minutes.
