Blueberry Chicken Salad

Note/Suggestions: This salad is so satisfying. It is also a great way to use leftover chicken if you have it on hand.
Makes 4 servings

Dressing:

Ingredients

  • 1/4 cup mayonnaise
  • 1/4 cup plain yogurt
  • 1 tablespoon of dried mustard powder
  • Dash cayenne pepper
  • 3 teaspoons of fresh chopped tarragon or 1 teaspoon of dried

Directions:

  1. Combine all ingredients in a medium sized bowl and mix well.

Salad:

Ingredients

  • 2 cups cooked, boneless, skinless chicken , cubed
  • 1/2 cup celery, chopped
  • 3/4 cup red onion, finely chopped
  • 1/2 cup red bell pepper, diced
  • 2 cups fresh blueberries, rinsed and drained well
  • 1/4 cup chopped almonds
  • Salt and pepper to taste

Directions

  1. Combine chicken, celery, onion, bell pepper and almond then toss with dressing.
  2. Carefully fold in blueberries until well coated then cover and refrigerate 30-60 minutes.
Tip:  Other items that are great to add to this salad are 3/4 cup diced tomato and 1 cup diced avocado if you think your family will like them. Serve this chicken salad on its own, on a bed of lettuce, in a pita pocket or in a wrap.
