Chicken Frittata
Note/Suggestion: This is better served at home and not packed to go. Serves 4-6 people.Ingredients:
- 6 eggs
- 1 cup frozen green peas, thawed
- 1 cup cooked chicken, shredded
- 1 tablespoon chopped parsley leaves
- 2 oz grated cheese, Monterey Jack or Swiss
Directions:
- Preheat oven to broil setting.
In medium size bowl, whisk the eggs with a pinch of salt and about ½ tsp of ground black pepper and 2 Tbl of cold water. - Heat 12-inch non-stick, oven safe sauté pan over medium high heat. Add butter to pan and melt.
Add the peas and chicken and heat through, about 2-3 minutes. - Pour egg mixture into pan and stir to evenly distribute the eggs, chicken and peas. Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top. Sprinkle with cheese.
- Place pan into oven and broil for 3 to 4 minutes, until lightly browned and fluffy. Remove from pan, sprinkle with parsley and cut into 6 servings. Serve warm.
