Chicken Souvlaki Sandwich
Note/Suggestions: This is a take on the flavors of a traditional Greek dish. If your family likes kalamata olives and picked vegetables, serve on the side. Makes 4 sandwiches.Ingredients:
- ¼ cup plain yogurt
- ¼ cup mayonnaise
- 1 tsp dried oregano
- ¼ tsp of ground cumin
- Salt and ground black pepper
- 2 cups of cooked chicken, sliced
- 4 slices of tomato
- 4 leaves of lettuce (optional)
- ½ of a cucumber, sliced
- 4 multi-grain rolls or buns
Directions:
- In a small bowl, combine the yogurt, mayo and the spices. Mix well. Season to taste.
- On the one half of each roll, spread ¼ of the yogurt mixture.
- Layer the chicken, tomato, cucumber and lettuce on each sandwich and wrap in parchment paper or plastic wrap.
