Chicken Waldorf Salad
Note/Suggestion: This salad is sweet and nutty and delish. Serve it on a multigrain roll or on a bed of lettuce.Makes 4-6 servings
Ingredients:
- 1/3 cup nonfat plain yogurt
- 1/3 cup mayonnaise
- 2 Tbsp of chopped fresh Tarragon
- 2 cups of cooked chicken into small cubes
- 1 large red apple diced, skin on (use two small apples if needed)
- 1 cup raisins
- 1 cup chopped walnuts (optional)
- 1 large celery stalk finely chopped
- Salt and ground black pepper
Directions:
- Mix the yogurt and mayonnaise together and stir in the tarragon.
- Toss the chicken, apple, raisins, nuts and celery together with the dressing.
- Season with salt and ground black pepper to taste.
