Fruit and Museli Slices
Makes 16 slicesIngredients:
- 1 cup dried apricots or any other favorite dried fruit(s)
- 2 medium apples, cored and grated with skin on
- 2 ½ cups cup Swiss style Muesli or Rolled Oats
- 1 1/3 cup of 100% apple juice (no sugar added)
- 2 Tbls butter, softened but not melted
Directions:
- Mix all ingredients together until well incorporated.
- Prepare two 8 inch nonstick cake pans with a piece of parchment paper to fit in the bottom of each pan.
- Divide the mixture evenly and press into the pans.
- Bake for 35-40 minutes or until it is lightly browned and firm to the touch.
- Once out of the oven, score the top of the muesli as if you were cutting it into 8 wedges.
- Let cool in the pan. Remove and break along the scored lines.
