Hearty Yogurt Nut and Seed Bread
Ingredients:- 1 Tbls of vegetable oil
- 2 cups all purpose unbleached flour
- 1 ½ cups white wheat flour
- 1 tsp salt
- 1 tsp cream of tartar
- 1 tsp baking soda
- 1 tsp baking powder
- ¾ cup mixed chopped nuts of your choice
- ¾ sunflower seeds, hulled (plus extra to sprinkle on top)
- 3 Tbsp honey
- 1 cup plain yogurt
- 1 ¼ cup milk
- Pre-heat the oven to 350 degrees and spray the bottom and sides of a loaf pan with cooking spray.
- In a large bowl whisk together the flours, salt, cream of tartar, baking soda and baking powder.
- In the bowl of a large standing mixer, fitted with a paddle, combine the milk, honey, yogurt and oil.
- Add the nuts and seeds and combine. Slowly add the flour mixture until a smooth soft dough forms.
- Pour the dough into the prepared loaf pan and smooth out so it is evenly distributed in the pan. Sprinkle the top with the extra sunflower seeds.
- Bake for one hour or until the bread is golden brown and the sides start coming away from the pan.
