Indonesian Inspired Chicken Wrap
Note/Suggestions: If you are allergic to peanuts, try this recipe with cashew butter or almond butter.Makes 4 wraps.
Ingredients:
- 2 cups cooked chicken, shredded
- 1 cup shredded cabbage or lettuce
- 1/2 cup shredded carrots
- 1 avocado sliced
- 4 burrito sized whole wheat or multigrain tortillas
- Indonesian peanut sauce-recipe to follow
Directions:
- Spread a a tablespoon of peanut sauce onto a tortilla.
- On one third of the tortilla place 1/2 cup of chicken, 1/4 cup of cabbage and 1/8 cup of carrots and 1/4 of an avocado.
- Take the side closest to you and fold over the filling. Fold in the two sides tightly then roll the whole thing towards the opposite end.
Peanut Sauce:
Ingredients:
- 1/4 cup all natural creamy peanut butter
- 1 Tbsp soy sauce
- 2 tsp honey
- 1 Tbsp lime juice
- 1 Tbsp water
- 1 dash of hot sauce (to taste)
- 1 Tbsp chopped cilantro and/or mint (optional)
Directions:
- Whisk all ingredients together in a small bowl.
