Kid Friendly Cobb Salad
Note/Suggestions: A traditional Cobb salad has blue cheese, kalamata olives string beans and such in it. Here is a modified version.Makes 2 servings.
Ingredients:
- 2 cups of mixed salad greens
- 1 cup cold chicken, cubed or shredded
- 1-6 oz can of pitted black olives
- 1/2 cup frozen of cut green beans, thawed
- 1/2 cup frozen peas, thawed
- 1/2 cup frozen corn kernals, thawed
- 1 cup grape tomatoes, cut in half
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup crumbled bacon, optional
Directions:
- Toss all ingredients together and divide into two reusable containers with lids.
- Dressing Options: You can always use your favorite bottled version of ranch or a vinaigrette or try making one of these.
Ranch Style Dressing
- 1/2 cup mayonnaise
- 1/2 plain non-fat yogurt
- 2 Tbsp. low-fat milk
- 2 Tbsp. chopped chives
Lemon - Honey Dressing
- 1 Tbsp. lemon zest
- 1/4 cup lemon juice
- 1 Tbsp. honey
- 1/2 cup olive oil
- sea salt and ground black pepper to taste
Creamy Cucumber-Dill Dressing
- 1/4 cup mayonaise
- 1/4 nonfat plain yogurt
- 1/4 lowfat sour cream
- 1/2 cucumber, peeled, seeded and rough chopped
- 1 Tbsp. chopped dill
- sea salt and ground black pepper
A serving size is about 2 Tbsp.-1/4 cup. Keep remaining dressing covered in the refrigerator for up to 4 days.
Thousand Island Style Dressing
- 1/2 cup mayonaise
- 1 Tbsp. ketchup
- 1 dash of hot sauce
- 2 Tbsp. prepared green relish
