Mediterranean Rice Salad with Chicken

Notes/Suggestions: You can use whatever vegetables your family likes or you have on hand. Keep the ratio to about 2 parts rice to 1 part chicken and 1 part vegetables. I use the rice we have leftover from dinner, but if you are making rice from scratch for this dish, a short grain Italian rice is a nice choice. Makes 6 servings.

Ingredients:

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • ¼ cup chopped basil
  • 3 cups cooked rice
  • 1 cup of cooked chicken shredded
  • ½ cup of grape tomatoes, large ones cut in half
  • ½ cup string beans, cut into bite sized pieces
  • ½ cup black pitted olives, rough chopped
  • ¼ cup shredded carrots
  • 1 scallion, chopped light green and white parts only
  • 1 cup crumbled feta cheese or cubed mozzarella cheese

Directions:

  1. In a large bowl, whisk together the olive oil, lemon juice and basil.
  2. Add rest of the ingredients, except the cheese.
  3. Toss together well. Fold in the cheese.
