Mediterranean Rice Salad with Chicken
Notes/Suggestions: You can use whatever vegetables your family likes or you have on hand. Keep the ratio to about 2 parts rice to 1 part chicken and 1 part vegetables. I use the rice we have leftover from dinner, but if you are making rice from scratch for this dish, a short grain Italian rice is a nice choice. Makes 6 servings.Ingredients:
- ¼ cup olive oil
- ¼ cup lemon juice
- ¼ cup chopped basil
- 3 cups cooked rice
- 1 cup of cooked chicken shredded
- ½ cup of grape tomatoes, large ones cut in half
- ½ cup string beans, cut into bite sized pieces
- ½ cup black pitted olives, rough chopped
- ¼ cup shredded carrots
- 1 scallion, chopped light green and white parts only
- 1 cup crumbled feta cheese or cubed mozzarella cheese
Directions:
- In a large bowl, whisk together the olive oil, lemon juice and basil.
- Add rest of the ingredients, except the cheese.
- Toss together well. Fold in the cheese.
