Oat and Apricot Clusters
Makes 2 dozenIngredients:
- 1 stick of butter (8 Tbls.)
- ½ cup honey
- 1 cup rolled oats
- 2/3 cup dried apricots, chopped
- 2 Tbls dried banana chips
- 1 Tbls dried shredded coconut
- 4 - 5 cups of cornflakes
- 24 regular muffin liners
Directions:
- In a small sauce pan, melt the butter and honey together over low heat.
- In a large bowl combine the rest of the ingredients.
- Pour the butter and honey over the top of the dry ingredients and mix well with a wooden spoon.
- Place the muffin liners on a cookie sheet or tray that will fit into the refrigerator.
- Fill the muffin liners as evenly as possible. Using an ice cream scooper works well here. You want a rough ball like shape as a result. Chill the clusters until firm. About 1 hour.
