Oatmeal Cranberry Bars

Note/Suggestions:  These hearty and delicious bars are a great snack and make a great fast breakfast with a glass of milk or yogurt drink. If you cannot get fresh cranberries, frozen will work too. Makes 1 dozen.

Ingredients:

Topping:

  • 12 oz. fresh cranberries, washed and drained
  • 1 cup apple juice
  • 1 cup sugar
  • 1 teaspoon of pumpkin pie spice

Base:

  • 3/4 cup butter
  • 3/4 cup flour
  • 1/2 cup brown sugar, packed
  • 1/4 teaspoon baking soda
  • 1 1/2 cups rolled oats
  • 1 cup toasted walnuts
  • 3/4 teaspoon cinnamon

Directions

  1. Heat juice and sugar in a pan until sugar dissolves.
  2. Add cranberries and spice; cook until berries pop, about 5 minutes, set aside to cool.
  3. Preheat oven to 350 degress.
  4. Coat a 9 x 13 baking pan with cooking spray or butter.
  5. In a food processor, combine butter, flour, and sugar until mixed and looks like cornmeal.
  6. Add baking soda, pecans and pulse until well combine and the walnuts are chopped.
  7. Stir in the oats and mix well. Reserve 1 cup of this mixture.
  8. Press remaining mixture into a 9x13 inch baking pan. Pour topping over oatmeal mixture.
  9. Crumble reserved oatmeal over cranberry topping.
  10. Bake for 35 minutes. Cool and cut into 12 bars.
