Oatmeal Cranberry Bars
Note/Suggestions: These hearty and delicious bars are a great snack and make a great fast breakfast with a glass of milk or yogurt drink. If you cannot get fresh cranberries, frozen will work too. Makes 1 dozen.Ingredients:
Topping:
- 12 oz. fresh cranberries, washed and drained
- 1 cup apple juice
- 1 cup sugar
- 1 teaspoon of pumpkin pie spice
Base:
- 3/4 cup butter
- 3/4 cup flour
- 1/2 cup brown sugar, packed
- 1/4 teaspoon baking soda
- 1 1/2 cups rolled oats
- 1 cup toasted walnuts
- 3/4 teaspoon cinnamon
Directions
- Heat juice and sugar in a pan until sugar dissolves.
- Add cranberries and spice; cook until berries pop, about 5 minutes, set aside to cool.
- Preheat oven to 350 degress.
- Coat a 9 x 13 baking pan with cooking spray or butter.
- In a food processor, combine butter, flour, and sugar until mixed and looks like cornmeal.
- Add baking soda, pecans and pulse until well combine and the walnuts are chopped.
- Stir in the oats and mix well. Reserve 1 cup of this mixture.
- Press remaining mixture into a 9x13 inch baking pan. Pour topping over oatmeal mixture.
- Crumble reserved oatmeal over cranberry topping.
- Bake for 35 minutes. Cool and cut into 12 bars.
