Popcorn Balls

Notes/Suggestions:  This are nut free, but you can always add the 3 cups of the nut of your likeing to this recipe

Ingredients:

  • 2 teaspoons of corn oil, plus more for hands
  • 12 cups popped popcorn (3/4 cup unpopped)
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 cup light corn syrup
  • ½ cup water
  • 1 tsp lemon juice
  • ½ tsp salt

Set up:

  • 1 – 2 cookie sheets lined with wax paper as a drying area
  • 1 large bowl greased with the corn oil
  • Pop the corn and put it into the greased bowl .

Directions:

  1. In a medium sauce pan over medium heat, combine the sugars, corn syrup, water, lemon juice and salt.  When the sugars disolve, turn the heat to high and cook the mixture until a candy thermometor reads 250 degrees.
  2. Carefully pour the syrup over the popcorn.  Using two forks, gently toss the popcorn with the syrup to coat well.
  3. Let cool slightly.  Coat hands with oil and form balls with the popcorn mixture, about 3 inch balls.
  4. Place them on the cookie sheets to dry.
