Whole Grain Muffins
Ingredients:
- 1 cup white wheat flout
- 1 ½ tsp baking soda
- ½ salt
- ½ light brown sugar, packed
- 1 ½ cup rolled oats or quick oats (not instant oats)
- ½ cup dried fruit of choice (raisins, apples, craisins, etc)
- 4 Tbls chilled butter cut into small cubes
- ½ apple sauce
- 1 large egg
- ½ tsp vanilla
- 1 cup low fat or non-fat plain or vanilla yogurt
Directions:
- In a food processor fitted with a metal blade, combine the first five ingredients including the oats and pulse until oats are finely chopped.
- Add the dried fruit and butter and process until coarsely chopped.
- Add the apple sauce, egg, vanilla and yogurt and process until well incorporated. Scrap down the sides of the bowls a few times to get everything mixed in.
- Pre heat oven to 375 degrees.
- Line each muffin tin with a paper liner or spray with cooking spray. Fill muffin tins about ¾ of the way full and let stand for 20 minutes while the oven is preheating.
- Bake for about 20-25 minutes until golden brown and springy to the touch. Let cool on a rack. Serve warm with butter and jam.
