Whole Grain Muffins

Ingredients:

  • 1 cup white wheat flout
  • 1 ½ tsp baking soda
  • ½ salt
  • ½ light brown sugar, packed
  • 1 ½ cup rolled oats or quick oats (not instant oats)
  • ½ cup dried fruit of choice (raisins, apples, craisins, etc)
  • 4 Tbls chilled butter cut into small cubes
  • ½ apple sauce
  • 1 large egg
  • ½ tsp vanilla
  • 1 cup low fat or non-fat plain or vanilla yogurt

Directions:

  1. In a food processor fitted with a metal blade, combine the first five ingredients including the oats and pulse until oats are finely chopped.
  2. Add the dried fruit and butter and process until coarsely chopped.
  3. Add the apple sauce, egg, vanilla and yogurt and process until well incorporated. Scrap down the sides of the bowls a few times to get everything mixed in.
  4. Pre heat oven to 375 degrees.
  5. Line each muffin tin with a paper liner or spray with cooking spray. Fill muffin tins about ¾ of the way full and let stand for 20 minutes while the oven is preheating.
  6. Bake for about 20-25 minutes until golden brown and springy to the touch. Let cool on a rack. Serve warm with butter and jam.
