Whole Wheat Cheese & Apple Loaf
Notes/Suggestions: This bread got its origins in the country side of England. It makes a wonderful accompaniment to soups or stews, or eaten on its own for a midday snack.Ingredients:
- 3 ½ cups white wheat flour
- 1 Tbsp baking powder
- ½ tsp salt
- 4 Tbsp butter, very cold and cut into small-ish cubes
- 4 green apples, peeled, cored and grated (I use the grater on the food processor)
- 4 oz grated medium sharp cheddar cheese
- 2 eggs, beaten
- Rolled oats for the top
Directions:
- Put the flour, baking powered and salt in the bowl of a food processor fitted with a metal blade and pulse until the dry ingredients are well incorporated and fluffy (You could use a sifter instead).
- Add the butter and whirl until the mixture looks like clumpy wet sand.
- Add the eggs and mix until well combined. Add the apples and cheese and pulse a few times just to mix them in a bit, but not to puree them.
- Dump the batter into the prepared loaf pan and spread until even. Sprinkle the oats on top and bake for 1 ½ -2 hours or until golden brown and well risen.
- When the pan is cool enough to handle, turn the bread out on to a wire rack and let cool.
